3rd Thursday Thought

I wanted to join in with the Hearts at Home Third Thursday Thought, even though I'm a little late!  .  The question this month is:  How are you like your mom?  How are you different?

I am like my Mom in the following ways:
~ We both love working with children.  She is a school secretary and I taught school three years before Caleb was born.  When I was a child she always volunteered at my school and in my class.

~ We both are planners.  We like to know what's coming and make plans for things in advance.

~ We both love cookbooks and have a big collection of them!

~ We both like to eat hot fudge sundaes with chocolate chip ice cream.

~ She was a stay at home Mom until I started high school and I've been a stay at home Mom since our son was born.

I am different from my Mom in the following ways:
~ She is such a good cook.  I enjoy trying new recipes and cooking for my family, but cooking is not the therapy for me that it is for Mom.  (That's what she calls it for herself.)  She cooks for me and my family and prepares enough for an army!  We always tease her about the amount of food she fixes.

~ She is much more artistic and crafty than me.  She crochets and I don't.  I always ask her to write the letters on a poster board or to cut out letters for a bulletin board because I'm not good at that.

~ She seems to be natural at growing things in the yard.  It is relaxing to me to be outside watering the yard and flowers, but I don't seem to have a green thumb!

3rd Thursday Thought

For this month's third Thursday thought for the Hearts at Home bloggers, the equestion is:
What is your favorite homemade dish? Share your recipe!
I love trying new recipes so I look forward to the recipes shared on this blog hop today.  My Mom will often get me a new cookbook for Christmas.  I have a big collection now, taking after my Mom actually.  I have a bunch of the Taste of Home cookbooks, and they are probably my favorite.  I have gotten many of our favorite meals from these books.

Here is one of our favorites.  It is called Biscuit Pizza Bake.  (I shared this back in August 2007 on the blog as well)

Biscuit Pizza Bake
1 lb. ground beef
2 tubes (12 oz. each) refrigerated buttermilk biscuits
1 can (15 oz.) pizza sauce
1 c. chopped green pepper
1/2 c. chopped onion
1 can (4 oz.) mushroom stems and pieces, drained
1 pkg. (3 1/2 oz.) sliced pepperoni
1 c. (4 oz.) shredded mozzarella cheese
1 c. (4 oz.) shredded cheddar cheese

In a skillet, cook beef over medium heat until no longer pink. Meanwhile, quarter the biscuits; place in a greased shallow 3-qt. baking dish. Top with pizza sauce. Drain beef; sprinkle over biscuits and sauce. Layer with green pepper, onion, mushrooms, pepperoni, and cheeses. Bake, uncovered, at 350 degrees for 25-30 minutes or until cheese is melted. Let stand for 5-10 minutes before serving. Yield: 6--8 servings

From: Taste of Home's 2001 Quick Cooking Annual Recipes

I never put the mushrooms or pepperoni in ours. Also, I usually only use one tube of biscuits. That pretty much covers the bottom of the baking dish I use.  I like to make this the same week I make spaghetti. I cook extra meat and also have sauce leftover. I really like it when I can find ways to use up the food before it goes bad.  Hope you enjoy it!

Have a day of blessings!

3rd Thursday Thought

I'm going to be participating with other Hearts at Home bloggers for a blog hope called  "Third Thursday Thoughts."  Our first question is:  Have you experienced any miracles in your life?

What do you think of when you hear the word miracle?  My mind goes to the miracles of the Bible where Jesus turned the water to wine...Or fed the 5,000 with the loaves and fishes...Or raised Lazarus from the dead...Or made the blind man see.

I haven't had any miracles like that in my life.  But there have been plenty of times when I knew that what happened was a special gift from God, something unexpected that only He could have done, something we could not have possibly done on our own.

One such time that comes to mind is the birth of our son.  When I went to my doctor's appointment before my due date, my doctor found he still had not dropped into the position where he needed to be to be born.  The next appointment was the same.  She had told us she would let me labor for 24 hours if I wanted, but she really did not feel it would be productive based on what she could see.  Or the other option was a c-section.  In the months of pregnancy I had not considered having a c-section.  I don't know that the thought crossed my mind really.

My husband and I prayed and talked about our options.  Of course we also had family members and friends who threw in their "two cents" that we should just wait and we'd regret not trying labor, etc.  Ultimately the decision was that I would have a c-section.  I can't begin to describe the peace I had leading up to August 12 that we had made the right choice.

We wouldn't know until after the fact just how right the choice was.  You see, after Caleb was born, my uterus did not contract as it should have done.  I lost blood, nearly to the point of needing a transfusion.  My doctor told us that she had "one more trick up her sleeve" and if that had not worked, she would have done an emergency hysterectomy.  But what she did worked and the bleeding stopped.

My doctor and the nurses were surprised how well I was doing after so much blood loss.  She told us that really it could have been tragic if I had not already been cut open from the c-section because there might not have been time to take me to surgery and get the bleeding stopped since nothing was working.

I have always felt that God had His hand on that situation, protecting both me and our son.  He gave His peace beforehand so we felt going into it that we were making the right decision.

Have a day of blessings!
