Recipes: Hobo Packs and Biscuits

Recently in one of my email groups someone passed on this recipe for Hobo Dinners. I remember having them as a kid when my parents cooked them on the big huge grill. I was going to fix them this week, but my Mom told me how long it would take so we saved it for the weekend. We separated the potatoes/carrots in their own pack and let them cook longer. Then after he got the burgers on for a while the grill ran out of propane! We finished cooking them inside, and they were delicious! The taste of the potatoes reminded me of my childhood.

I saw my husband pull out the old cast iron skillet, and I was thinking what in the world are you doing with that!! (We never use it.) He had a recipe for biscuits he wanted to try. On Thursday night one of his classmates had explained the steps to make these biscuits. They are SO good!

Here are the recipes!

Hobo Dinner

1 pound ground meat- divided into 1 /4 pound portions
1 pound package of baby carrots- divided into 4
portions
4 medium baking potatoes, sliced
1 medium onion, sliced and divided into 4 portions
salt and pepper to taste
4 large sheets of aluminum foil

Divide meat into 4 equal portions, and form into
patties. Place in center of aluminum foil sheet, add
divided portions of carrots, potatoes, and onion.
Season as desired. Fold foil, around contents and
place on large cookie tray. Bake at 375 degrees for or
hour or until meat is thoroughly cooked and vegetables
are tender. This dish can also be prepared over a camp
fire or on a grill.


Cast Iron Skillet Garlic Biscuits (I don't know their "real" name.)

Use a cast iron skillet.
Put 6-7 pats of butter in bottom.
Melt butter on stove top.
Sprinkle about 1/8 tsp. garlic powder (NOT garlic salt) and 1/8 tsp. table salt in melted butter.
Layer biscuits (1 can) in skillet.
Put in oven at 350.
Bake 10-15 minutes or until golden brown on top.
